We might not have a snow-covered Christmas here in Australia but there’s no reason we have to miss out – we can have a white Christmas slice instead. The origin story of this festive slice is that we invented it right here in Australia as a sweet reimagining of what a cold Christmas looks – and, ahem, tastes – like. It’s meant to look like snow and the dried fruit is meant to look like Christmas baubles. Sure, it might be a long bow to draw but what’s important is that this easy white Christmas slice is delicious no matter where you live. It’s a perfect gift from the kitchen or a sweet treat for Christmas night. Read on to find out how to make a white Christmas slice.

What ingredients should you put into a white Christmas slice?

Traditionally, a white chocolate Christmas slice is made of a handful of ingredients –white chocolate (obviously!), coconut oil, desiccated coconut, glacé fruit and Rice Bubbles (we’ve used Coles Rice Puffs in this recipe). The rice puffs are the foundation, the chocolate is the glue, the coconut oil gives a smooth texture, and the other additions add the wow factor. Now, when it comes to rules for what you can add to a white Christmas slice recipe … there are no rules! Add whatever flavours you like – think dried fruit, like apricots and cranberries (here’s a recipe for that –fudgy white Christmas), nuts, or go for a hack like we have and buy a pre-prepared rocky road snack mix to save time. Keep all the quantities about the same as in this recipe for white Christmas slices, so the wet ingredients can fully incorporate the dry ingredients.

What could go wrong with this white Christmas Rice Bubble slice?

Nothing! It’s a next-to-no-cook slice that’s super easy and done in three steps. However, there is one area that needs a little extra care: melting the chocolate. We’ve melted it on the stovetop but you could do it in the microwave too (see FAQs). To melt it on the stovetop, bring a saucepan half-filled with water to a gentle simmer. Put a heatproof bowl on top of the saucepan and make sure it’s not touching the water. Add your chocolate and stir it until melted. You don’t want any water to touch the chocolate or the bowl during this process as it could make the chocolate seize and you’ll have to start again. For the same reason, use a metal spoon to stir rather than a wooden spoon, which is porous and may be holding water.

For nice, clean slices, use a sharp knife and dip the knife in hot water between each cut –this will stop the slice from sticking and keep the fruit looking clean and visible.
