I'm gong to explain why the gummy candies melt when adding the sour/sugar coating and how to prevent it from happening so your gummies turn out just like the one's in the picture.
First you have to understand what Citric Acid is and how it reacts to the gummy candies.
What is Citric Acid:
Citric acid is an organic acid found most abundantly in fruits (especially citrus fruits) like lemons, limes, grapefruit, pineapples, and oranges. Its chemical formula is C6H8O7. This organic acid was first isolated from a lemon usingAspergillus niger(a fungus) in 1784 by Carl Wilhelm Scheele. 1/4 teaspoon citric
1/4 cups of sugar
Add ingredients to a zip lock back or container with a lid, mix thoroughly and store in a dry, cool place.
Add gummy candies to sugar mixture and shake or mix thoroughly.
Pour coated candies into a wire mesh strainer and gently shake off excess sugar. Ta da, that's it, you now have perfect sour gummy bears.
