Galette is a French term that refers to many flat, round cakes that are usually made with flaky pastry dough. This term is very broad and could be used to describe an array of desserts, but in this specific recipe, we will be talking about a savory galette that is made out of a delicious buttery pastry dough filled with some fresh garden vegetables and topped with fresh feta cheese.

What Ingredients Do I Need To Make This

For the crust;

  • Unbleached flour – Chilled in the freezer for 15 minutes.
  • Sugar – Regular granulated sugar is fine.
  • Cold unsalted butter – Cut into 1/2-inch pieces.

For the filling;

  • Cherry tomatoes – Halved.
  • Extra virgin olive oil
  • Bagof spinach – Washed, drained, and thoroughly dried.
  • Garlic – Minced.
  • Dijon mustard
  • Feta cheese
  • Shredded mozzarella
  • Sharp cheddar cheese

Egg Wash;

  • Egg yolk
  • Water

How Long Does It Take?

This recipe is somewhat of a time consumer, but it definitely is one of those dishes that will make you feel very accomplished by the end! You will have to make the pastry crust first and then chill it for a while which takes some time. Then when it comes to baking, to ensure a fully baked crust and no soggy bottom you would want to give your galette enough time in the oven!

So, all in all, you have to account for about 2 to 2 and a half hours in total to create this recipe!

How Many Servings Will This Make?

This recipe yields 4 generous servings, which leads me to think that if you are planning on having a side dish to this savory galette, you could definitely get 6 servings out of it!

What Do I Serve It With?

This Savory Spinach and Cherry Tomato Galette is something that could easily be served on its own but would go great with a side salad or a soup. Since summer is coming up and it’s starting to get a little warmer, I would recommend enjoying this delicious dish with an arugula salad.

The proximity to the heat will help crisps the pastry.Is galette crust the same as pie dough? Yes the same dough is used although for a galette the dough is free formed and folded up and over the filling. It is then baked directly on a baking sheet instead of in a pie dish.Can I freeze an unbaked galette? Yes. An unbaked galette can be wrapped tightly and frozen for up to 3-4 months. When baking you will need to add an additional 15-20 minutes to the time.

Ingredients

Crust;

  • 1 1/2 Cup (195 g) Unbleached flour, chilled in the freezer for 15 minutes.
  • 1/2 Tsp (2 g) Sugar
  • 1/4 Tsp (1 g) Salt
  • 1/2 Tsp (2 g) Coarsely ground black pepper
  • 9 Tbsp (130 g) Cold unsalted butter, cut into 1/2 inch pieces
  • 4-5 Tbsp (60-75 ml) Ice water

Filling;

  • 1 Pint (290 g) Cherry tomatoes, halved
  • 1 Tbsp (15 ml) Extra virgin olive oil
  • 1 9 Oz bag Spinach
  • 3 Cloves Garlic, minced
  • 3 Tbsp (45 g) Dijon mustard
  • 1/4 Cup (37 g) Feta cheese
  • 1/4 Cup (37 g) Shredded mozzarella and sharp cheddar cheese
  • Salt and pepper to taste

Egg wash;

  • 1 Egg yolk
  • 1 Tbsp (15 g) Water

Instructions

  • In a large bowl, whisk the flour, sugar and salt. With a pastry cutter or your fingertips, incorporate the butter into the flour mixture until it resembles coarse meal, with some larger chunks here and there.

  • Form a well in the center, and add in 4 tablespoons of ice water. Mix with your fingers until the dough holds together enough to form a ball. If it is too dry, add the rest of the water one teaspoon at a time.

  • In the meantime, turn on the oven to 400°F (204 C) and then start heating up the oil in a pan over medium heat. Add in the spinach, garlic and salt and pepper and cook until tender about 10 minutes. Transfer to a plate to cool and set aside.

  • Now start rolling the dough between two sheets of lightly floured parchment paper into a 14-inch (35.5 cm) circle. Make sure to loosen the parchment paper from the dough occasionally and add some extra flour if it sticks. Discard the top parchment paper and transfer the bottom parchment paper with the dough onto a baking sheet.

  • Leaving 2-inches (6 cm) at the border, spread the Dijon mustard over the dough, then scatter the cooked spinach and halved cherry tomatoes and sprinkle with the feta cheese.

  • Fold the edges of the dough over the filling. If you have any issue with the dough sticking to the parchment paper, refrigerate it for 5-10 minutes, and then continue folding it. Brush the folded dough with the egg wash and sprinkle with the shredded mozzarella and cheddar cheese.

  • Bake the galette for 35 to 45 minutes, rotating halfway through to ensure even color all around. Remove from the oven and let it cool for about 10 minutes, then cut and serve with a side salad or enjoy it on its own!
