My favorite fluffy pancake recipe is the only one you will need. It is easy and delicious. The trick is the vinegar. Combining milk and vinegar together makes homemade buttermilk. This results in the perfect pancake.

  • 1 teaspoon baking powder
  • Extra butter for cooking.

How to Make My Favorite Fluffy Pancake Recipe

  1. Combine the milk and vinegar together. Let it rest 5 minutes. This is essentially making buttermilk (never buy buttermilk again!)
  2. Combine dry ingredients in a large bowl.
  3. Whisk egg and butter together with the buttermilk.
  4. Pour the flour mixture into the buttermilk mixture and whisk until smooth.

I used to just make Bisquick pancakes, but once I was given the perfect homemade pancake recipe, there was no going back. These take only a few extra minutes, and the effort is well worth it. I’m convinced that once you try this recipe, you won’t return to another. Enjoy!

This is our very favorite recipe for pancakes. I can’t tell you how many times we make them and there are never leftovers. The very best 🙂 Often I will make a batch, cool and layer between waxed paper and freeze for a quick breakfast.

Seriously THE BEST PANCAKES IN THE WORLD!!
I have never been a pancake fan, but had to become one as my daughter just loves pancakes.
I have recently became a vegan & have tried many different vegan pancake recipes and they were all Just ok. I missed these pancakes, so I decided to make them vegan. They are amazing! I used coconut spread for the butter & applesauce for the eggs. They are still so delicious!!!
Oh and we also add cinnamon to our pancakes (we’re a bit obsessed with cinnamon).

Yeah! I’m so glad they worked for you. I would absolutely love your recipe for vegan – the amounts for the coconut spread and applesauce if you were willing to share. I know there are a lot of vegans out there who would love to have this option. I would do a post with your version. Let me know if you are willing to share.

Absolutely will share! I use coconut milk for the milk (same amount), coconut spread for butter (same amount), and 1/2 cup of applesauce for the eggs (1/4 cup per egg for any recipe that calls for eggs). I don’t know the exact amount of cinnamon I use…. we just tap it in the mix until the flour starts getting a little brown (basically a lot!). 🙂

Do you really get 16 pancakes how big do you make your pancakes, because I get about 6 really big fluffy ones, it could be the way I make them also. I was just wondering. Thanks in advance I really like your site 🙂

My husband says I make my pancakes too small. We made them yesterday, and I had 6 leftover. I would estimate we ate 9 – if I remember correctly. I use about 1/4 cup scoop for my pancakes. Thanks so much!

Does your country sell buttermilk? The vinegar is basically making buttermilk, so you can substitute the vinegar and milk for buttermilk. It’s no competition – BEST pancakes I’ve ever made by far! Deep brown outside, moist rich inside without being at all doughy. Nice buttery flavor.
Found this posting by looking in google images. I knew what the pancake that I wanted to cook would look like. You can’t really tell by seeing a recipe how a pancake will turn out. So thanks for the pics ?
Here’s how I make buttermilk (even easier) : mix half plain yogurt and half milk and you’re done. Otherwise I made no changes, as you advised. I’ll probably mix in some fruit from time to time though. Do you ever do that?

Would whole wheat flour work? If so, how much would you recommend? Also, what if I’m using almond milk? Will the vinegar still do its thing???

I’ve never made these adaptations with this recipe before, so I’m not sure. I don’t imagine the vinegar would work. I might try and use less. With wheat flour and other recipes I’ve found that it’s most effective to do a 1/2 white 1/2 white combination. If you are testing things out, report back as to what works so that other readers might get the help too. Thanks so much!

Hi just made these and had an urge to teak the recipe but I didnt.Glad I didn’t bc I want taste these in their original form.THEY WERE AWESOME!Better then my favorite Hungary Jack light and fluffy, I was amazed how simple the recipe was and ingredient list.maybe next time I will reduce the sugar a little,we are pretty heavy on syrup so sweetness can be kept minimum. Thanks for sharing

I’m so glad you loved this recipe. I haven’t found a better one. I’m sure reducing the sugar a bit would be fine. I hear ya on trying to control the syrup and sweetness. It’s fun to watch the numbers spike on this recipe on Saturday and Sunday mornings. I don’t think you are the only one who has made this their go-to recipe.

Mine did not turn out at all! This is the second recipe I have tried making pancakes and it was a disaster (for me). Not fluffy at all. I have never had any issues making pancakes until this time and the time before. Wondering if I have an ingredient that’s off? Any thoughts? Thank you!

Super weird. I’ve had nothing but great comments on this recipe. Have you checked to see if your baking soda is out of date? I know that can impact cooking. Whisking is important too, so if you just stirred it together it could have not turned out. I always use 2% milk. I can’t really think of anything else that may have impacted it. So sorry you are struggling. My only other thought is altitude. I do know that impacts baking. Gosh – wish I were there doing it with you to try and figure it out. Good luck.

Oh my goodness, I made these pancakes this morning for the first time. They were awesome. My husband said no more IHOP..LOL I put powdered sugar and syrup on top. The family said they were delicious! Thanks. My go to for now on.
