Our house will be full of visitors in the week before Christmas, so I need to get myself organised and do as much preparation as possible beforehand as this is probably the busiest week of the year. I want to make Nigella's Triple Cheese Strata and wondered if it could be frozen, and whether this can be done before cooking, or whether it should be cooked first, ready for reheating? Thank you.

Our answer

Nigella's Triple Cheese Strata (from Christmas) is a type of savoury bread and butter pudding. It is a great dish for either a brunch or a light supper. It can be assembled the day before it is needed and left in the fridge, though if you are cooking straight from the fridge it may need longer than the 30 minutes specified in the recipe.

Unfortunately as the strata contains what is effectively a savoury egg custard it does not freeze well either before or after baking. However you could probably assemble it up to 48 hours before it is needed, if this helps with your planning a little. We would also suggest that maybe you look at Nigella's Pumpkin Pancake recipe (also from Christmas) or Ricotta Hotcakes (from Forever Summer and on the Nigella website) an alternative for breakfast or brunch. These can be made in advance and frozen in resealable containers (with baking parchment in between layers). Thaw the pancakes overnight in the fridge or on a wire rack at room temperature for about an hour then stack them on a heatproof plate, cover with foil and reheat in an oven preheated to 170c/375F for 20 minutes.
