I am so excited about this partnership with Alexia foods! I have been a long time fan of their products. Between Alexia Foods and my slow cooker, it’s all that kept my family out of the drive thru when I was a working mom. I regret to say that until last week, I had NEVER been to their website. It is FULL of the most delicious and quick weeknight meals! I was supposed to pick 5 new meals to make using their products, well let’s just say I narrowed it down to 6, and we will be trying out a few more new Alexia inspired recipes next week too!

Our first meal this week were these Cowboy Quesadillas with Southwestern Seasoned Fries and Smoky Chipotle Sour Cream Dipping Sauce.

With the help of leftover grilled chicken, precooked bacon and Alexia Smart Classics Fries, this was on the table in 25 minutes! Here’s how I made it:

Cowboy Quesadillas, Seasoned Fries, & Smoky Chipotle Dipping Sauce
Ingredients
2 Grilled Chicken Breast, sliced (Or buy pregrilled chicken!)
1 package ready to eat bacon, sliced
1 onion, sliced
1 bell pepper, sliced
2 Tbsp oil or butter
2 Tbsp brown sugar
2 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
juice of half a lime
colby jack cheese, shredded
8 medium sized Flour Tortillas
butter
Smoky Chipotle Sour Cream Dipping Sauce
Ingredients
1 cup sour cream
juice of half a lime (the other half you used for the quesadillas!)
1 canned chipotle pepper in adobo sauce, finely chopped
For the Southwest Seasoned Alexia Fries
1 Package Alexia Smart Classics Fries
Chili Powder to taste
Cumin to taste
Garlic Powder to taste
Directions
In a large skillet, melt butter over medium high heat, saute bell pepper for 2 minutes. Add onions and saute 2 more minutes. Reduce heat to medium and add brown sugar. Continue cooking until veggies are done, about 5 minutes. Add sliced grilled chicken, bacon, lime juice, chili powder, cumin and garlic powder to onion mixture. Stir to combine and remove from heat.
Meanwhile prepare Smoky Chipotle Sour Cream Dipping Sauce by combining sour cream, chipotle pepper, and lime juice. Store in fridge.
To make quesadillas, layer cheese and chicken and veggies on one half of each tortilla. Careful not to overfill. Add butter to a large skillet over medium high heat, and fold the other tortilla half over. Brown both sides in the skillet and set aside. Repeat until all quesadillas are prepared. Prepare Alexia fries according to package directions and season with chili powder, cumin and garlic powder to taste. Serve Cowboy Quesadillas and Southwestern Seasoned Fries with Smoky Chipotle Sour Cream Dipping Sauce.

Our next meal were these AMAZING Beer Braised Onion Burgers with Onion Rings and Roasted Red Pepper Dipping Sauce. Oh my goodness! Still dreaming about this one!

We already have a favorite burger recipe, but it is NOT a weeknight meal. I was shocked at how easy to prepare these burgers were and how delicious they tasted! A huge thanks to Alexia for showing me how to make burgers, a weeknight meal! I am now addicted to their recipe for Roasted Red Pepper dip. I want to eat it with everything! The most time consuming part of this recipe was caramelizing the onions, so just make sure to start them right away and they will be ready when your burgers are! Here is how I made it:

Beer Braised Onion Burgers with Onion Rings and Caramelized Onion & Roasted Red Pepper Dipping Sauce (recipe courtesy Alexia Foods!)
Ingredients
1 tablespoon Pure Wesson® Canola Oil
2 cups thinly sliced sweet onion
1/4 teaspoon salt
3/4 cup beer
1-1/4 pounds ground round beef (85% lean)
2 tablespoons La Choy® Lite Soy Sauce
1/4 teaspoon ground black pepper
4 slices (1 oz each) Swiss cheese
8 teaspoons Gulden’s® Spicy Brown Mustard
4 hamburger buns with sesame seeds, toasted
1 bag Alexia Onion Rings with Panko Breading and Sea Salt
Directions
Heat oil in large skillet over medium-high heat. Add onion and salt; cook 5 minutes or until tender, stirring occasionally. Carefully add beer. Bring to a boil. Reduce heat, cover and simmer 10 minutes, stirring occasionally. Remove lid and simmer 5 minutes more or until liquid has evaporated.
Meanwhile, combine beef, soy sauce and pepper in medium bowl. Shape mixture into 4 patties, about 1/2-inch thick. Heat another large skillet over medium-high heat. Add patties; cook 5 minutes on each side or until cooked through (160°F). Top each patty with 1 slice cheese; melt slightly. Remove from heat.
Spread 2 teaspoons mustard on bottom half of each bun. Top each with a patty and about 1/4 cup onion mixture. Close with tops of buns. Prepare Onion Rings according to package directions. Serve immediately.

Caramelized Onion & Roasted Red Pepper Dipping Sauce (recipe courtesy Alexia Foods)
Ingredients
2 cups ranch dressing
1/2 cup diced yellow onion, caramelized
1/4 cup diced roasted red peppers
1/4 cup sour cream
Dash cracked black pepper
Directions
1. Stir together all ingredients. Chill at least 1 hour before serving.

Our next meal ended up being a delicious dinner and my lunches for the week! It tasted EVEN better the next day! I was inspired by the ham salad sandwich recipe on the Alexia website to make Ham Salad WRAPS! Yummy! Served with their delicious crinkle cut fries, easy peasy!

I whipped this ham salad up in less than 10 minutes. One of the quickest meals ever! Here is how I made it:

Easy Ham Salad Wraps with Crinkle Cut Fries (Recipe Courtesy Alexia Foods)
Ingredients
1 small red onion, finely chopped
1 pound cooked ham, roughly chopped
6 cornichons
2 medium ribs celery, roughly chopped
1 pickled jalapeño, seeded and stemmed
2 scallions, finely chopped
1/3 cup mayonnaise
2 tablespoons Dijon mustard
Flour Tortillas
Directions
Put onion in a small bowl, cover with cold water, and soak for 10 minutes to mellow the flavor. Drain onion, pat dry with paper towels, and transfer to a medium bowl; set aside.
Put ham in the bowl of a food processor and pulse until chopped fine. Transfer ham to the bowl with onion. Add the cornichons, celery, and jalapeno to the bowl of the food processor and pulse until ingredients are chopped fine.
Add the cornichon mixture, along with the scallions, mayonnaise and mustard to the ham mixture; stir to combine. Spread ham salad on toritillas with lettuce and tomato if desired. Serve with Alexia Crinkle Cut Fries prepared as directed.

The next dinner we had was probably my kid’s favorite! How can you go wrong with sliders using a deliciously seasoned waffle fry in place of the bread? These are adorable!

This meal was made incredibly easy by purchasing the ready made bbq pulled pork, a bag of coleslaw mix and the Alexia Seasoned Waffle Fries! Here’s how I made it:

Waffle Fry Pulled Pork Sliders (Adapted from Alexia Foods)
Ingredients
1 package Alexia Waffle Fries
16 oz package pulled pork in bbq sauce, warmed
1 cup prepared coleslaw
dill pickle slices
Directions
. Prepare waffle cut fries according to package directions. Cool slightly for 5 minutes.
To assemble sliders, place pulled pork on 16 waffle cut fries. Top with coleslaw and pickles. Place remaining waffle cut fries on top of coleslaw. Serve warm.

These Grilled Hawaiian Chicken Sandwiches with Garlic Mayo was probably MY favorite meal. (I ended up doubling the garlic mayo and dipping EVERYTHING in it for a couple of days. My breath was KICKIN’ but it was DELICIOUS!)

This was was adapted from a recipe from the Alexia site. I LOVED the marinated grilled chicken paired with the garlicky mayo and sweet pineapple. Ok, this one is going on the menu again next week. Ha! Here is how I made it:

Grilled Hawaiian Chicken Sandwich with Garlic Mayo
Ingredients
2 Chicken Breast, sliced into 4 thin cutlets
1/2 cup teriyaki marinade
3 Tbsp oil
1 large head garlic, grated (I used a microplane)
1/3 cup mayonnaise
salt & pepper to taste
4 slices pineapple
4 Slices pepper jack cheese
4 rolls or buns
Directions
Combine teriyaki marinade and oil. Place 4 chicken cutlets in marinade and refrigerate overnight.
Combine garlic, mayonnaise, salt and pepper in a small bowl. Refrigerate until ready to use. Grill marinated chicken breast until internal temperature reaches 165 degrees. Grill pineapple until lightly browned. (I forgot this step!)
Prepare Fries according to package directions. Lightly Toast buns. Place a layer of garlic mayonnaise on the bottom. Top with chicken, pineapple and cheese. Place under broiler until cheese melts. Top with additional garlic mayo and top bun. Serve immediately.

I never thought I would say that my hubby’s favorite meal this week was a salad, but my hubby’s favorite meal this week WAS a salad. How did this become possible? That’s because it was a salad that contained Grilled Steak and French Fries. 🙂

We were only asked to create 5 meals, but I was having so much fun, I had to do 1 more! I had heard about the infamous Pittsburgh Salad a month or 2 ago and put it on my MUST TRY list. When Alexia contacted me about this opportunity, I instantly thought about this recipe and knew it was a perfect excuse to try it out. Boy were we glad we did! My hubby said it was the best salad I have ever made him! Here is how I made it:

Pittsburgh ‘Steak & Fry’ Salad
Ingredients
1 1/2 lbs marinated & grilled steak, sliced
head of lettuce
4 hard boiled eggs
red onion slices
tomato, chopped
cucumber, chopped
colby jack cheese, shredded
croutons
16 oz bag Alexia Crinkle Cut French Fries
Ranch Dressing
Directions
To assemble the salad, I chopped and sliced the veggies while the french fries were baking. I cooked them a little more crispy than normal to make sure they stayed crisp in the salad. I layered lettuce, tomato, onion, cucumber, deviled eggs, croutons and cheese into each bowl. Tossed with the dressing then added the steak slices and french fries at the end, to ensure maximum crispness. Serve immediately.
