Baked Pancake Pizza is Simply Delicious!
Baked Pancake Pizza is delicious and easy to make. This vegan, gluten-free sheet pancake is super light and fluffy but it’s also a pancake pizza with yummy fruit toppings. So simple, too! Uses commonly found ingredients.
Foolproof Vegan Gluten-Free Pancake!
This pancake is FOOLPROOF. I have never been all that good at making pancakes. I always ruin the first few and I almost always have some kind of improvement I’d have made.
Being vegan and gluten-free now, pancakes became even more of a challenge. But I’ve made this a couple of times already and it’s been fluffy and awesome and delicious every time.
I used Bob’s Red Mill Gluten-Free Pancake Mix and it was so simple to make it vegan. (Of course, you can use your own favorite pancake mix and add toppings and sauce.)
The “pizza crust” here is really a giant, fluffy pancake. We made it on a pizza pan so it’s round and, with the fruit toppings, looks very pizza-like.

Carter, who’s 8 and loves pancakes, was my helper in the kitchen. He stirred and placed toppings and even took some of these photos.
So Easy To Make Pancake Pizza!
To start, butter the bottom of a pizza pan or cookie sheet and preheat the oven to 350 degrees F.
Then, whisk together the coconut milk, applesauce, oil, and vanilla. Then add the pancake mix and stir until combined.
Pour out onto the 12″ pizza pan or a large cookie sheet.
Spread out into a circle making sure it’s not spread too thin. It should be a “fluffy pancake thickness,” or about 1/4″ thick.
Add sliced strawberries, banana, peaches, or any of your favorite fruit. Bake for 15 minutes at 350 degrees then broil for 3-5 minutes until the top is a little browned.
Add a Creamy Topping!
After our pancake pizza was baked, we drizzled it with an easy mix of equal parts of almond butter and maple syrup. It was delicious! Just stir the two together until creamy. A bit of cinnamon or ginger added can be nice, too! A mix of equal parts of peanut butter and syrup would work well, too.
The sauce is sweet and creamy and goes perfectly with fruit and pancake.
Easily cut this or any pizza with kitchen scissors!

- 3tbspalmond or peanut butter
- 3tbspmaple syrup

For the sauce, stir together the almond or peanut butter with the syrup until smooth a creamy. Drizzle over pizza before serving with more maple syrup, if desired.
For easy cutting of the pancake pizza, use a pair of kitchen scissors or a pizza cutter.
